COOKING WITH HONEY RECIPES
PUMPKIN ICE CREAM
While this is this tasty dessert’s title, it would be more accurately termed “Frozen Pumpkin Dessert.” It is easy to make and very healthy—perfect for the kids to get involved with.
4 ripe bamanas
1/3 cup honey
1 cup pumpkin puree
1 1/2 teaspoon of pumpkin pie spice or allspice
Dump all of the ingredients into a blender and puree until smooth. Place in a freezer safe container and freeze. Enjoy with a dollop of whipped cream and a dash of cinnamon.
This recipe originally called for sugar. Here are the directions using honey as a substitute. The honey makes the cake moist and gives it a warm, golden flavor.
Peel and core 3 or 4 apples (your choice of variety).
Mix with: 1 teaspoon cinnamon and 3-4 teaspoons of honey
In a separate bowl, mix together:
1/4 cup orange juice
3/4 cup vegetable oil
1 teaspoon vanilla
1 1/2 cup honey
Once this is well mixed, add
3 cups of flour
3 1/2 teaspoon baking powder
Once the batter is mixed together, grease and flour a bundt pan. Pour in a layer of the batter followed by the apple mixture. Finish with another layer on top of the apple mixture. Bake in a preheated 325-degree oven for 1 1/4 hour.
